SOMMELIER
CURRENT ADMISSIONS FOR THE 2024/2025 SCHOOL YEAR
We offer the only program in Bulgaria with a professional qualification "Sommelier" (NCPD - 2020, code 5131 - 2006 "Sommelier").
Students who successfully complete the program receive a Certificate of Professional Qualification "Sommelier".
The goal of the program is to familiarize students in detail with all aspects of winemaking, tasting technology, culinary technologies, sommelier skills, wine tourism, etc. The training is carried out through theoretical and practical classes on the topics studied to acquire a professional qualification as a sommelier.
The program is suitable for anyone who loves wine and wants to become a professional in this field.
The program lasts for 2 semesters (1 academic year).
The course schedule includes 7 courses in the fall semester and 8 courses in the spring semester, consisting of theoretical and practical classes on the topics studied. During each practical session, up to 6 wines will be tasted, corresponding to the theoretical part. Lectures are held on Saturdays and Sundays at NBU.
Courses in the first semester:
- History, civilization, and culture of wine;
- Terroir. Classification of wines;
- Fundamentals of wine tasting. Technology. Organoleptic analysis;
- Oenology;
- Bulgarian wine varieties;
- World wine varieties;
- Special wines.
Courses in the second semester:
- Sommelier. Functions and competences;
- Bulgarian wine regions;
- World wine regions;
- Gastronomy and serving;
- Management of the winery in the restaurant;
- Specifics of wine tourism;
- Distilled beverages and liqueurs.
- Practical internship
The program is completed by taking a state exam.
The fee for taking the state exam is 100 BGN.
Graduates receive managerial, technological, and specific professional knowledge and skills that enable them to compete in the field of restaurant management, tourism, and the wine sector.
Instructor: Ivan Makedonski, a wine expert who has been leading courses on various wine-related topics at CASAVINO for the past 8 years, conducting master classes and authoring projects related to wine and food.
